Guilt Free Pancakes


What?! I hear you say. How can pancakes be guilt free? Yes my friend, these babies are carb, gluten, dairy, wheat free. 



Working up to Christmas, I know that a lot  of you are anxious about overeating and want to be as good as you can until then, but these delicious soft fluffy pancakes are just what the doctor ordered, and they are absolutely guilt free and in fact, good for you. And they couldn't be more simple to make! Perfect treat for when you are craving something delicious but healthy, or when you have girls over for the week end.

Here's what you'll need:


3 large eggs
1tbs water
1tbs vanilla extract
2tbs local honey
1.5 cups ground almond
1/4tbs celtic sea salt
1/4tbs baking soda
coconut oil for cooking
To garnish, as you prefer. 
I chose a handful of blueberries, a few strawberries and more honey.

Do this:
Whisk eggs into water, vanilla extract and the honey. Add the ground almond, baking soda and salt and combine well. It will all become a nice thick base.
Stir until you reach the desired consistency. Use medium to medium low heat, and do not make them larger than 3″ in diameter. Flip when little bubbles form, and add more oil as needed. 

Serve with some good music (e.g. Matilda by Alt-J on repeat, as i did) and orange juice or almond milk, s I did. Absolutely delicious.
